Month of Meals: Crockpot Chicken & Dumplings

I love my crock pot. And I love finding new things to cook in it. I found this really easy recipe over on $5 dinners and adjusted it a tiny bit.

Easy Chicken & Dumplings

2 large chicken breasts, diced
1 onion, diced
1 celery stalk, diced
1/2 cup diced carrots
1 can cream of chicken soup or comparable substitute (normally I would not use a can and make sauce from scratch, but we got free soup at the grocery store yesterday)
Salt, pepper, other spices to taste
1 can biscuit dough

Throw everything but the dough into the crock pot and cook on low for about 8 hours. Add a little water, but not too much, as there will be liquid created by the cooking process and you want this to be creamy, not brothy. About an hour before serving, add the biscuits on top.
