
I’ve finally joined in on Meal Plan Mondays! It makes sense, considering I’ve been planning our meals for quite some time. Check out the link at the bottom of the post for a ton of other meal plans.
We’re taking it pretty easy this week, at least in my view. Every Tuesday and Thursday have to be easy meals – Tuesdays I go write and Thursdays Bob goes to his pool league. And of course every Friday is pizza. This makes it very simple to plan the week, as long as we stick to it!
I got a cheap cut of beef a couple weeks ago knowing it would last a few meals, so we’ll be enjoying it in different forms this week. I always try to have at least one new recipe each week too, and this week that means the BLT Quiche. If it turns out well I’ll be posting the recipe later on tonight.
Monday: BLT Quiche
Tuesday: Falafel
Wednesday: Pot Roast
Thursday: Burritos
Friday: Pizza
Saturday: Beef Vegetable Stew
Sunday: Chicken Stir-fry
