Two weeks in a row on sticking with the menu! Plus both weekend dinners were so, so good. The Thai chicken curry was quick to make with the curry paste, although it was very spicy! Next time I will use half the amount of paste. Quick tip, by the way: Check out the ethnic section of your grocery store (or head to a stand-alone ethnic grocery) for great variety on ingredients and amazing prices. I got a 14 oz container of red curry paste (Mae Ploy) for less than a 4 oz jar of Thai Kitchen brand curry paste. Plus, since Mae Ploy is actually made in Thailand, I know it is authentic.
Sunday we had King Ranch Chicken Casserole for the first time ever. This is a signature dish in Texas, and I’m happy to have learned how to make it! I used Homesick Texan’s Slighty Fancy-Pants recipe since I try to avoid canned soup. It did take about an hour of cooking and prep, plus 30 minutes in the oven, but it was worth it in the end – especially because I made two 8×8 casseroles instead of one large one. Our freezer is now pretty well stocked with “extra” food!
