I think I mentioned in my previous post that it’s been a bit hard to plan meals, not knowing what our CSA will bring. Now that we are every other week I think it will be better and I won’t feel pressured to use whatever random ingredient shows up in each meal.
I’m also going to get back to working out and trying yet again to eat less junk. It seems that most of my problem revolves around being at work, to be honest. Proofreading is fairly tedious work, and I find myself snacking to break up the day. Which reminds me that I forgot to get more healthy snacks when I was at the grocery store yesterday. Meal planning certainly doesn’t seem to be helping our tendency to go to the store every other day. Sigh.
Through the rest of the month I’m going to be trying to use up all the meat that is in the freezer so in July we can work on buying only the good stuff. I’m hoping that if we are selective we will actually save money in the long run.
Monday: Beef Stroganoff (I’ve used this recipe before but I found it was too runny/not creamy, so I’m going to make some adjustments. I’ll post the recipe if it turns out well.)
Tuesday: Veggie dogs, sweet potato fries & coleslaw
Wednesday: Chicken quesadillas
Thursday: BBQ Lentils
Friday: Pizza
Saturday: Salmon
Sunday: Dr Pepper Ribs
