We’ve been in a drought for a long time, so when it rained all day Saturday I had to take advantage of the weather to make beef stew in the crock pot instead of what we had planned. Sunday was meant to be tandoori chicken, but at 2 p.m. I realized the chicken had to marinade 6 hours, not 3, so I decided to make chicken jalafrezi with squash instead of fava beans. It turned out fine, but I was actually quite disappointed in the spice level – I expect Indian food to be very flavorful, and this was not. This is the first recipe I’ve made with my Indian cookbook, so we’ll see if it is a fluke.

I’m planning to go apple picking on Saturday, so expect quite a few recipes featuring apples in the next couple of weeks!

Monday: Green Chile Mac & Cheese

Tuesday: Zucchini Risotto

Wednesday: Quiche

Thursday: Quesadillas for the boys, I’ll be hanging out with friends

Friday: Pizza

Saturday: Green Chile Pork Stew I’ll be attempting to recreate the amazing stew they serve at The Roaring Fork

Sunday: Pineapple Soy Salmon

    I love cast iron pans! We use ours all the time. I think I remember reading that she said you could use any pan that is ovenproof though.. maybe you have something? I can’t wait to start baking.. I went through a baking phase last Fall, lol.
