Ridiculous cake of ridiculousness

Whew! I was a busy lady in the kitchen this week. I made Apple Butter and Maple Apple Muffins earlier in the week, and then starting Friday I was in a cooking blitz. I made spicy pepper jam, pesto, applesauce, squash apple puffs, roasted eggplant dip, froze grated potatoes for instant hash browns, Mark Bittman’s Apple Upside Down Cake (pictured above), two Dutch apple pies for the freezer, and spaghetti sauce. And then there was also prep for last night’s potluck and making green chile pork stew for dinner on Sunday.

I’m tired.

Next weekend there will be NO cooking on my part, because I have a ticket for Austin City Limits Festival. I’ve never been, so I’m pretty excited, although I’m sure I’ll realize I’m too old for 3-day music extravaganzas. Either way, I will be having a very easy weekend!

Monday: Grilled Chicken Salad

Tuesday: Curried Lentils

Wednesday: Brats, Sweet Potato Fries

Thursday: Beef and Green Bean Stirfry

Friday, Saturday, Sunday: Not my problem!

    The apple upside cake looks delicious. I still have some left over apples so I think I will try this. I would love to know how you make the Beef and Green Bean Stir fry. That sound really good.
