Menu Plan: January 4
This week starts three weeks of what I hope will not be entirely horrible. I’ll be going vegan and gluten-, caffeine-, alcohol-, and sugar-free in an effort to break myself of all the junk I love to put in my mouth. I sort of tried it a few months ago but I didn’t try very hard. This time I have a clear plan of what I’ll be eating, and stocked my kitchen ahead of time.
My husband and son aren’t technically taking part, but since I plan dinner and do most of the cooking, they’ll end up eating what I eat.
Breakfasts: Rice Chex, brown rice bread, gluten- and dairy-free blueberry waffles
Lunches: Dinner leftovers
Snacks: Fruit, raw vegetables & hummus, peanut butter, rice chips, corn chips and salsa
Monday: Falafel (no pita for me)
Tuesday: Vegetable stir fry with brown rice
Wednesday: Giant salad (with chicken for the guys)
Thursday: Potato-onion casserole
Friday: Pizza with gluten-free crust (just veggie toppings for me)
Saturday: Pumpkin soup
Sunday: Tomato rice soup (with grilled cheese for the guys)
I’ll be posting the recipes during the week!
Oh yeah, and there is that whole waking up extra early to do Couch-2-5k thing.
It’s going to be interesting, to say the least.

Good luck! That’s a large life change for anyone. Just a warning, be prepared for a bit of a dip in energy when you go gluten and sugar free for a few days! (I’m sure you’ll feel the same without caffeine – I know I would!) Your body craves those carbs for a while until you adjust. Mine did. And if you like nuts, they make a great source of protein and long-lasting energy. I love nuts. Probably too much.

I have definitely been feeling the energy dip! Plus without caffeine I’ve been having headaches the past few days. I’m hoping it will all even out soon!
