Meal Plan: January 11

So, it only took a week for the caffeine headaches to go away. I’ve been doing well on the diet otherwise, although I’ve been having some aches that are probably due to the sudden cold weather and not the food I’m eating.

The potato onion casserole was pretty good (recipe here), and I used the leftovers, along with carrots and pumpkin to make a nice creamy soup for Saturday’s dinner.

My husband hasn’t been too put out by my diet so far – of course, he did eat two huge microwave burritos for his lunch yesterday and then tried to get me to have some hot chocolate later – so that is definitely a big help. It’s funny to me that even though I’ve easily been having plenty to eat and haven’t felt like I was lacking anything (OK, except for that caffeine) I would still jump at the chance to run to Texadelphia for a sandwich and queso. By the time I finish this cleanse I’ll probably not be able to eat that anyway!

Here’s this week’s plan:

Monday: Spaghetti w/homemade sauce (rice pasta for me)

Tuesday: Homemade tamales from last month (didn’t use lard, so they are vegan; we have a ton in our freezer to eat up)

Wednesday: Chickpea and lentil pilaf, adapted from Vegetable Matter

Thursday: Veggie burgers and sweet potato fries

Friday: Pizza w/gluten-free crust and no cheese for me

Saturday: Pasta e Fagioli soup, adapted from Food Network

Sunday: Vegetable curry

We’ll see if I can make it through another week of cleanse!

    I don’t really have a recipe, to be honest! I just buy curry paste from the Asian section of my grocery store, add some coconut milk, and toss in whatever vegetables we have on hand. It always turns out yummy!
