i know this post is pretty old but i figured i would share how i scrape vanilla beans.

you want to split the bean down the length with a very sharp paring knife. take one half and use the back of the knife and scrape all the seeds out of the hull. i do this 3-4 times to make sure i get as much as possible! repeat with the other half. and after you are done with the empty hulls you can add them to where ever you store your sugar to make vanilla sugar (which is out of this world) or start your own vanilla extract (vodka and vanilla beans)! i never throw away any of the hulls! i have a HUGE container for my sugar since i do so much baking and canning. it seriously holds like 20 lbs of sugar and i keep adding the hulls to that!

Hi Christina,
Yes, it did. Jams and such can take up to two weeks to set properly. If you're worried you can empty all the jars and re-cook the marmalade with added pectin, but based on the recipe I posted it *should* set!

Just tried this recipe. Did it take a while for the marmalade to set up after the water bath? It's been about 24 hours and it's still kind of runny.

Thanks!

Rose! I have <a href="http://www.amazon.com/gp/product/B0002BF1WY?ie=UTF8&tag=stetted-20&linkCode=as2&camp=1789&creative=390957&creativeASIN=B0002BF1WY" rel="nofollow">this tool kit</a> and I just use a large stockpot for water bath processing. I'm planning to get a pressure canner in a few weeks, once I decide on the size.

I'm totally hopping on this bandwagon. I've just started baking my own bread. Last fall I made my first ever homemade jam (spicy tomato: http://www.massdistraction.org/weblog/recipes/#TomatoJam) and this Spring I'm going to try my hand at some raised bed gardening. I wasn't taught how to do any of it growing up, but doing these things myself now is extremely satisfying.
