I’ve been away from the menu planning for a while. November was so busy that while I tried to keep up with the actual planning, posting fell by the wayside. And half of December was spent recovering from November, with the other half going to social engagements, lots of thinking about the future, and just plain being tired.
But I’m back on it.
I used to just post our main entree but I’m going to try posting everything. I’m hoping this will help curb any last-minute trips to the grocery store, which I hate, but can’t seem to avoid. (There are far too many weeks I’m at SuperTarget every day.)
Plus my husband got me something really awesome to help in the kitchen, but I’ll be talking about that later.
Monday: Panko Chicken Strips, Peas, Salad
Tuesday: Leftovers (I’ll be out teaching one of my co-workers how to make pizza from scratch!)
Wednesday: Pizza Pancakes, Carrots
Thursday: Honey Hoisin Chicken, Rice, Broccoli
Saturday: Daring Cooks’ Challenge
Sunday: Butter Chicken, Rice, Peas
Normally we would not eat so much chicken in one week, but I’m preparing for some changes and I’m getting the poultry out of the way. There will be more about that too, in the coming week. January will be interesting, to say the least.
