Weekly Meal Plan, May 5

We had a wonderful weekend, featuring a night out without the kids. It’s always nice to go out together and actually feel like we have time to catch up. We even got to see a movie that didn’t involve animation, which only happens about once a year. Life has been pretty busy lately and I’ve got a lot of pans on the fire, so being able to relax while also having time for projects is very appreciated, and a great way to kick off my birthday month.

This week I’m testing out a couple of recipes from Plated, thanks to a promo code on Facebook. I’m slightly skeptical about it, and it’s pretty pricey per serving (about $12) but it looks like it might be a good option for people who want to cook but don’t like the prep involved. I’ll report next week on how it went!

Monday: Carrot, Dill, and White Bean Salad – I’m going to add some of the burgundy bush beans from our garden as well.

Tuesday: Caprese stuffed zucchini

Wednesday: Steak with Papas Bravas and Dandelion Greens (Plated)

Thursday: Roasted Vegetable Tostadas with Mexican Street Corn (Plated)

Friday: Last soccer practice – party!

Saturday: Burgers on the grill

Sunday: Mother’s Day/my birthday – Fingers crossed that the boys are taking care of the meals.

I’m also planning to make wheat crackers, and I’ve been meaning to do English muffins for weeks now. Plus I have an idea for a birthday cake, but I’m pretty sure no one else in the family will like it, so I’ll throw together some of Christina’s Chocolate Cobbler for the others. I grew up with chocolate cobbler, but we called it Hot Fudge Pudding Cake — I think it was the most-often made dessert in our house.
