My veins pump at least 50% cheese. As a Wisconsinite, we’re born with cheese love, although my own taste buds took a while to catch up to that idea. Nowadays my fridge is consistently stocked with at least five kinds of cheese. Just in case.

This cheese life expanded further when I attended a special tasting event put on by The Cheeses of Europe. I, along with a handful of other local bloggers, got one-on-one tasting lessons on a variety of cheeses, from brie and comté to mimolette and camembert. I went home with a belly full of cheese, butter, and wine and my head spinning from what I learned.

Since it’s entertaining season, I couldn’t resist coming up with a quick and easy appetizer you can make for your Christmas or New Year’s Eve party. You only need a few ingredients — the most important being luscious camembert, though you can swap in brie if you prefer.

Aside from the cheese, all you need is cooked chicken, pickled jalapeños, and phyllo shells. Many of the cheeses at the tasting I attended were paired with flavors that harkened to the tastes of Texas, so I wanted to follow that theme through in this recipe. If you don’t like pickled jalapeños, a spicy jam would also be a great topper for these little bites. You could even do a sweet jam and the jalapeños to get a full contrast of flavors.

These camembert chicken bites are best when warm from the oven and don’t take long to make, so you can have everything prepared in advance and just pop them into the oven when your guests arrive.

These go great with broccoli cheese toasties (just cut them into small bites for party serving) and party sliders with waffle fry buns. Don’t forget to wash it all down with a bit of bubbly!

Ingredients
  

  • 2 packages phyllo cups, 30 cups total
  • 1 wheel camembert cheese
  • 1/2 cup shredded cooked chicken
  • 30 pickled jalapeños

Instructions

  • Preheat oven to 350°F.
  • Cut camembert into small pieces and divide among the phyllo cups. Top cheese with chicken, then top each one with a pickled jalapeño.
  • Bake in the oven for about 10 minutes, until cheese is melted.
  • Serve immediately.
