It’s funny how something so basic can taste so different when you switch up the ingredients. OK, American cheese does melt quickly, but it kind of tastes … plastic-y. And it just doesn’t look right. So tonight for my grilled cheese I used homemade olive oil bread, Wisconsin sharp cheddar, and Havarti with dill. It was really, really good. Super cheesy the way cheese really should be, with strings coming out of the sandwich and everything. The dill added a nice little “whassat?” to the sandwich. This might be my new comfort food standby.
