Banana Muffin Recipe

Tender banana muffins make a great breakfast or snack. It mixes up just as easily as your favorite banana bread, but baked into muffin cups for grab and go eating.

01 Bananas

02 Flour & oats

03 Eggs

04 Butter & brown sugar

Beat together brown sugar and butter until fluffy.

Beat in very ripe bananas. No need to pre-mash!

Beat in eggs until completely mixed in.

Stir together dry ingredients in a separate mixing bowl.

Add dry ingredients to wet batter until no dry bits remain.

Scoop  batter into a muffin pan lined with paper cups or coated with nonstick spray.

Bake at 375°F for 18-20 minutes, until golden and a toothpick in the center comes out with only moist crumbs.

Serve warm or let cool. Cooled muffins will release easier from paper liners.
