Easy Almond Biscotti

Crisp and lightly sweet, these coffee shop staples are easy to make at home!

Gather ingredients

Eggs

Granulated sugar

All-purpose flour

Almond extract

Baking powder

Salt

Slivered Almonds

In a large bowl, beat together eggs and granulated sugar.

Once light and airy, add in almond extract.

Combine flour, baking powder, and salt, and mix into egg mixture until well blended.

Stir in slivered almonds until evenly distributed. The dough will be somewhat sticky and wetter than a standard cookie dough.

Scoop half the dough onto a parchment lined baking sheet and pat into a rectangle.

Bake 50-60 minutes, rotating pans halfway, until firm and lightly browned.

Cut rectangles into 1-inch slices. Place cut-side down on baking sheet. Bake again until crisp.

Let biscotti cool completely before storing in an airtight container.
