Easy ricotta cake

Mix dry ingredients

Stir together flour, sugar, baking powder, and salt

Mix wet ingredients

Whisk together eggs, ricotta cheese, and vanilla

Combine & add lemon

Stir together wet and dry ingredients, then add lemon zest and juice, and melted butter.

Fold in fruit

Add raspberries and stir carefully to not crush. Batter should be thick and somewhat lumpy.

Prepare pan

Butter a springform pan and dust powdered sugar on bottom and around the inside.

Fill and bake

Scoop batter into pan and add extra berries on top. Bake at 350 degrees for 50 minutes.

Sprinkle with powdered sugar and serve.
