Roasted Garlic Guacamole
Cut top off garlic bulb and rub edges with olive oil. Wrap in foil and roast until soft. Let cool.
Halve and pit avocados and mash slightly in a mixing bowl.
When garlic is cool enough to handle, scoop out roasted cloves and add to bowl.
Add chopped green onion, cilantro, and salt.
Mix well, mashing avocado further as you stir.
Stir in lime juice. Taste and add more salt or lime juice to your liking.
Enjoy with chips, tacos, or on toast!
