Loaded baked potato soup

Saute chopped onions in butter, then add garlic and stir until fragrant.

Add diced yellow potatoes.

Add vegetable broth, milk, and thyme, bring to a boil, and let simmer.

Puree soup using an immersion blender, or transfer in batches to a standard blender.

Add fresh chopped chives and cheddar cheese

Whisk until completely smooth, then cook briefly to heat through.
