Mexican Hot Cocoa Cookies

Delightfully chewy, these chocolate crinkle cookies have warming spices to make them extra special!

Gather ingredients

Softened butter

Granulated & brown sugars

Flour

Eggs & vanilla

Cocoa powder

Ground chile, cayenne, & cinnamon

Baking soda

Salt

Cream of tartar

Cream together softened butter, granulated sugar, and brown sugar until fluffy.

Mix in eggs and vanilla extract until well blended.

In another bowl, combine flour, cocoa powder, ground chile, cayenne, cinnamon, baking soda, cream of tartar, and salt.

Add dry ingredients to sugar mixture and stir until completely incorporated. Chill 30 minutes while you preheat the oven.

In a small bowl combine granulated sugar and cinnamon.

Form dough into balls and roll in the cinnamon-sugar mixture until coated.

Arrange dough balls on cookie sheet, leaving space to allow for spreading.

Bake 10-12 minutes. Cookies will be slightly puffed and then deflate. Cool on a wire rack.

Enjoy with a cup of hot cocoa or a cold glass of milk!
