Peppermint  Meringue Cookies

Crisp and sweet, peppermint meringue cookies are easy to make and perfect for holiday gift tins!

Gather ingredients

Egg whites

Salt

Granulated sugar

Cream of tartar

Powdered/confectioner's sugar

Peppermint or mint extract

Gel food coloring, optional

Dark or semisweet chocolate

Combine egg whites and granulated sugar and beat until foamy.

Add cream of tartar, powdered sugar, and peppermint and beat until soft peaks form.

Scoop into a piping bag or ziptop bag. If using colors, brush a stripe of each on either side of the bag.

Pipe dollops of meringue onto baking sheets. A decorating piping tip is optional.

Bake the meringue until crisp, then turn off the oven and let the meringues dry inside.

Melt chocolate in a small bowl and dip the bottoms of cooled meringues. Set on waxed paper.
