01 Cucumbers

02 Bell pepper

03 Onion

04 Cider vinegar & sugar

06 Mustard seed & celery seed

Slice cucumber into rounds. Thinly slice pepper and onion and combine in a large bowl.

Sprinkle on pickling salt, celery seed, and mustard seed. Mix well to coat.

Stuff vegetables into a large half gallon mason jar (or multiple small jars).

Let stand for 1 hour. The salt will pull out water from the vegetables. Do not drain.

Whisk together cider vinegar and sugar in a liquid measuring cup.

Pour mixture over vegetables in jar. Screw on lid.

Place in the refrigerator and let rest for at least 2 days before eating.
