Tex-mex tater tot casserole
Chop up leftover brisket, green onions, and cilantro.
Make queso by creating a roux with butter and flour, then whisking in milk. Thicken and add cheese, stirring until melted, then add Ro-tel.
Assemble with brisket on the bottom, covered by queso, then arrange tots.
Bake, scatter extra cheese on top, then return to the oven until melted. Sprinkle with green onions and cilantro.
Serve with sour cream on top.
