Whew! It feels like the past week just blew by. I’m sure no small part of it is from my continuing cedar allergies or whatever the heck is plaguing my body right now.
We switched our produce delivery to every other week. As much as I’d like, I just don’t have the time to keep up with a weekly box. February is also my “cook from the pantry” month. The shorter month makes it easier to plan around – granted, it’s only shorter by two days, but somehow that makes us all crazy, doesn’t it? I’ll try to only buy milk, eggs, and produce. Cooking up the roast means we’ll have plenty of meat leftover for extra meals, especially weekend lunches that seem to be harder to plan for.
Monday: I have ATXSwappers, so we’ll have something quick – Chicken apple sausages and macaroni & cheese
Tuesday: Thai larb, from Glorious One-Pot Meals
Wednesday: Lentil soup
Thursday: Beef roast
Saturday: Roasted vegetables
Sunday: Pork fried rice
Sunday’s plan is dependent on whether we get invited to any Super Bowl parties. My team is in it (go Pack go!) so it would make sense for us to have a party, but I don’t know if I’ll be able to get it together by then. Especially since I forgot that it was already this coming Sunday. Can you tell I’ve had a tiring week?
