Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup white whole wheat flour
  • 1/2 cup rolled oats
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon grated nutmeg
  • 4 tablespoons softened butter
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1/2 cup buttermilk
  • 1 teaspoon pure vanilla extract
  • 1 1/2 cups fresh blueberries

For the streusel

  • 1/4 cup all-purpose flour
  • 1/4 cup brown sugar
  • 1/4 cup rolled oats
  • 2 tablespoons softened butter

Instructions

  1. Preheat oven to 400°F. Grease a muffin tin, or line with paper liners.
  2. Mix together 1 cup all-purpose flour, white whole wheat flour,1/2 cup rolled oats, baking powder, baking soda, cinnamon, and nutmeg and set aside.
  3. In another bowl, cream together 4 tablespoons butter and 1/2 cup brown sugar. Beat in eggs, then stir in buttermilk and vanilla.
  4. Stir liquid mixture into flour mixture until just mixed. Add blueberries, and stir until just incorporated.
  5. In a small bowl, mix together remaining flour, brown sugar, oats, and butter with a fork until a coarse crumble forms.
  6. Fill muffin cups 3/4 full, and sprinkle with streusel. Bake for 18 minutes. Let cool slightly in pan, and serve.
