1/3cuppesto
1teaspoonred wine vinegar
1/2teaspoonlemon juice

Instructions
Combine the cucumbers, tomatoes, shallot, and mozzarella in a large bowl.
Whisk together the pesto, red wine vinegar, lemon juice, and salt. Taste and adjust seasoning, if necessary.
