cucumbers

halved (about 10 ounces)

shallot
diced

ounces
mozzarella pearls

pesto

teaspoon
red wine vinegar

teaspoon
lemon juice
Salt and pepper
to taste
Instructions
Combine the cucumbers, tomatoes, shallot, and mozzarella in a large bowl.
1 pound cucumbers,
1 pint cherry tomatoes,
1 shallot,
8 ounces mozzarella pearls
Whisk together the pesto, red wine vinegar, and lemon juice in a bowl.
1/3 cup pesto,
1 teaspoon red wine vinegar,
1 teaspoon lemon juice
Pour the pesto mixture over the vegetables and toss gently to coat. Season with salt and pepper to taste. Cover and chill until ready to serve.
