In a large bowl, whisk together flour, sugar, baking powder, baking soda, salt, and cinnamon. Transfer to an airtight container (preferably with a large enough opening for a measuring cup) and store in the pantry for 3-6 months.
To make pancakes
In a mixing bowl, whisk together 1 cup mix, milk, egg, and melted butter until the dry ingredients are fully incorporated.
Set a skillet or griddle over medium heat (350°F) and portion out pancake batter. Cook until edges look dry and bubbles have formed on top, then flip and cook until golden on the bottom.
