Instructions
In a small bowl, combine the salt, pepper and garlic powder. Season the pork chops evenly with the spice blend on both sides.
Place an oven rack on the top shelf, then preheat the broiler.
Heat 1 tablespoon of olive oil in a large, oven-safe skillet over medium-high heat. Sear the pork chops until golden brown and crisp, 4-5 minutes, then flip and repeat for an additional 4-5 minutes. Transfer to a plate and cover with aluminum foil to keep warm.
Reduce the heat to medium and add the butter and remaining tablespoon of olive oil. If there are any brown bits on the bottom of the pan, use a spatula to scrape them up and stir them into the liquid. Add the garlic and cook until fragrant, 30-60 seconds. Add the honey, water, vinegar, and crushed red pepper (if using), then increase the heat to medium-high and cook, stirring frequently, until the sauce has thickened, 4-5 minutes.
Return the pork to the pan and coat with the sauce. Place the skillet in the oven and broil until the edges are slightly charred, 1-2 minutes.
