Strawberry spinach salad is a wonderful salad to showcase in season strawberries. It's tossed with a light homemade dressing for an easy side.

Ingredients
5ouncesbaby spinach
8ouncessliced strawberries
4ouncesgoat cheese crumbles
1/3cupsliced almonds
1/4cupthinly sliced red onion
Citrus Dressing
1tablespoonorange juice
1tablespoonlemon juice
2teaspoonsdijon mustard
1/2teaspoonminced garlic
2tablespoonsolive oil
1/4teaspoonfine sea salt
1/8teaspoonground black pepper
Instructions
In a large bowl, add the spinach, strawberries, goat cheese, red onion, and almonds.
To make the dressing, in a small bowl whisk together the orange juice, lemon juice, dijon, and garlic. Pour in the olive oil while whisking until dressing is blended and slightly thickened. Add half the salt and pepper, then taste and add more as needed.
Pour dressing over the salad and toss gently to coat. Serve immediately.
Notes
To make ahead of time, layer salad ingredients and cover tightly. Add dressing and toss just before serving.
