Grease a 9x13-inch baking dish with nonstick spray or butter. Add the bread, apple, and cheese, distributing evenly.
8 cups cubed French bread, 2 cups diced apple, 6 ounces white cheddar
In a mixing bowl, whisk together eggs, milk, cream, shallot, maple syrup, salt, thyme, sage, nutmeg, and black pepper, beating until frothy. Pour evenly over the bread and apples.

Cover with plastic wrap and place in the refrigerator for at least 2 hours, or overnight.
When ready to bake, preheat oven to 350°F and remove the dish from the refrigerator to bring to room temperature.
Remove the plastic wrap and gently press the mixture down. Bake for 55-65 minutes, until nicely browned on top. It will puff up while baking, but deflate slightly as it cools. Serve warm.
