Cook the penne according to package instructions. Drain the pasta and rinse with cold water until cool. Shake to remove excess water.
8 ounces penne pasta
In a large bowl, combine the pasta, chicken, romaine, tomatoes, croutons, parmesan, and caesar dressing. Season with salt and pepper to taste.
2 cups rotisserie chicken, 2 cups chopped romaine lettuce, 1 pint grape tomatoes, 1 cup croutons, 1/2 cup shaved or grated parmesan cheese, 3/4 cup Caesar dressing, Fine sea salt and cracked black pepper
Top individual servings with additional parmesan cheese and cracked black pepper.
Notes
If making in advance, wait to add the croutons until just before serving to keep them crunchy.
The romaine should stay crisp for about 1 day, but you may wish to leave it out until serving.
