Goat Curry
This warming curry is a great way to introduce yourself to goat meat.

Ingredients

tablespoons
butter
2
tablespoons
curry powder
such as Madras Curry from Penzey's
1
tablespoon
ground coriander
1/2
teaspoon
ground cardamom
1
teaspoon
ground black pepper
1
teaspoon
ground ginger
2
teaspoons
fine sea salt
1/2
teaspoon
ground turmeric
1
pound
goat stew meat
1
medium onion
diced
1
pound
sweet potato
diced
1
can coconut milk
1
can diced or crushed tomatoes

tablespoons
tomato paste
1
cup
chicken stock
Instructions
In a dutch oven or stock pot, melt the butter over medium heat.
Combine the spices together in a small bowl, then stir into the butter and cook until fragrant.
Add the goat meat and cook until browned. Add onion and cook until almost translucent.
Stir in remaining ingredients and bring to a boil, then reduce heat and let simmer for at least two hours. Serve with rice or couscous and naan.
