Ingredients
4fresh strawberrieshulled and sliced
6 to 8fresh mint leaves
1ouncefresh lime juice
¾ouncesimple syrup
2ouncesclub soda

Instructions
Wash strawberries, hull, and slice.

Remove the mint leaves from the stems and gently clap them between your hands to release their oils and aroma.
6 to 8 fresh mint leaves
Add the strawberries, mint leaves, lime juice, and simple syrup to a cocktail shaker or sturdy glass.
1 ounce fresh lime juice, ¾ ounce simple syrup
Muddle gently until the strawberries release their juices and are mostly broken down. Avoid crushing the mint too aggressively to keep the flavor fresh.
Add a handful of ice and shake for about 10–15 seconds until thoroughly chilled.
Ice
Fill a highball glass with fresh ice and strain the strawberry mixture into the glass. Top with club soda and gently stir to combine.

Garnish with extra mint, sliced strawberries, and a lime wedge if desired. Serve immediately.
Notes
To make simple syrup, combine 1 cup water and 1 cup granulated sugar in a small saucepan. Heat over medium, stirring, until sugar is dissolved. Let cool and store in the refrigerator.
To make a whole pitcher, multiply ingredients by 4 to 6. Chill strawberry mixture until ready to serve, then add club soda to each drink as serving.
