Pickled Asparagus

Yeah, I know, it sounds weird. And I don’t know how great it will taste, but I’m going to be finding out soon!

The Can Jam challenge for May was either asparagus or rhubarb. I kind of freaked a little. Being in Texas, asparagus ended when it was getting started elsewhere, and rhubarb really isn’t grown here. So apologies, but for this month my challenge offering is not local. Well, the garlic is. Does that count?

Pickled Asparagus

I’m hoping they don’t choose strawberries for next month. Although I did already do two kinds of strawberry jam this year, strawberries will be done by June. I have my fingers crossed for the catch-all category of “berries” so I can make excuses to go pick blackberries!

    Okay now. I just showed my husband the picture and it looks like we’ll be doing some this weekend. He loves pickling and has never tried asparagus. We’ll have to compare notes when we both have available jars.
