For ages my husband relied on boxed pancake mix. I’m not sure if he thought scratch-made pancakes were too complicated or he thought the boxed mix had a super secret ingredient, but it wasn’t long before I started making batches of pancake mix to keep in the pantry rather than buying it.
Making pancakes from scratch isn’t difficult, but there’s no reason to not make it easier! This mix is great because it uses ingredients you already have on hand and can be made in as large or small a batch as you like.
Homemade pancake mix is easily customized too, so you can make different batches based on your tastes, or keep it simple and add your favorite ingredients when cooking.
Save time on your weekend breakfast with this simple pantry-ready mix!
Ingredients for pancake mix

You’ll need:
- Flour
- Granulated sugar
- Baking powder
- Baking soda
- Ground cinnamon
- Salt
Customize it
Add in other ingredients like whole wheat flour, oats, or chopped nuts. You can also swap the cinnamon with ground nutmeg or cardamom, or use a blend like pumpkin or apple pie spice.
Want to make a chocolate pancake mix? Replace some of the flour with unsweetened cocoa powder. I usually keep a 3:1 ratio of flour to cocoa powder (3 cups flour plus 1 cup cocoa).
Note that if you add nuts, I recommend storing the pancake mix in the freezer so it stays fresh longer.
How to make this recipe
Grab a large mixing bowl and a whisk.
Combine all of the ingredients in the bowl, whisking well to aerate and blend.
You can use this mix immediately, or transfer to a large airtight container. I like using a container large enough to get a measuring scoop into, but if you are gifting the mix, large mason jars work well.
Store the pancake mix in a cool dry place like a pantry for 3-6 months.
How to use homemade pancake mix
For 1 cup of pancake mix, you’ll need:
- 1 cup milk (or buttermilk!)
- 1 egg
- 1 tablespoon melted butter or vegetable oil
I recommend adding this to a label or tag for your mix, so you’ll always know what you need.
Whisk together the mix, milk, egg, and butter/oil until no dry bits remain. It’s OK if the batter is a little lumpy!
At this point you can add in your favorite mix-ins like blueberries, chocolate chips, chopped nuts, or sprinkles.
Heat a skillet or griddle to medium (350ยฐF) and portion out batter. Cook until bubbles form on the surface and the edges look dry, then flip and cook until the bottoms are golden.
Each cup of pancake mix will make enough pancakes for 2-4 people, depending on how hungry they are.

Instructions
For the mix
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, salt, and cinnamon. Transfer to an airtight container (preferably with a large enough opening for a measuring cup) and store in the pantry for 3-6 months.
To make pancakes
- In a mixing bowl, whisk together 1 cup mix, milk, egg, and melted butter until the dry ingredients are fully incorporated.
- Set a skillet or griddle over medium heat (350ยฐF) and portion out pancake batter. Cook until edges look dry and bubbles have formed on top, then flip and cook until golden on the bottom.
