Salted Caramel Cashew Cookies

Salted Caramel Cashew Cookies

  • 1 cup cake flour
  • 1 cup whole wheat pastry flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 4 ounces butter , softened
  • 1/2 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 2/3 cup caramel bits
  • 3/4 cup chopped cashews
  • Fleur de sel , for sprinkling on top


  1. Preheat oven to 350°F. Line baking sheets with parchment or a Silpat.
  2. In a medium bowl, combine flours, baking soda, baking powder, and salt.
  3. In a large bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy. Beat in egg and vanilla.
  4. Stir flour mixture into sugar mixture until combined, then stir in caramel bits and cashews.
  5. Scoop dough onto prepared baking sheets, about an inch apart. Sprinkle each with fleur de sel.
  6. Bake for 11-13 minutes. Let cool on baking sheet for 1 minute before removing to rack to cool completely.
