In my opinion, there’s no such thing when it comes to the idea of too many pies at Thanksgiving. When else do you get to enjoy such a dazzling array of desserts?

I’ve collected my favorite holiday pie recipes just in case you’re looking to round out your own menu. Whether you love classic pies like pecan, unexpected surprises like shoofly pie, or fluffy chocolate peanut butter, there’s sure to be a pie you’ll love!

One of the best ways to make your holiday pie baking easier is to prep the crusts ahead of time.

If you’re making a classic pie crust, you can chill it 3-4 days in advance, or freeze it for longer! Make sure you thaw frozen crust overnight in the fridge, or you won’t be able to roll it out.

You can also combine the crust ingredients and stop before adding the liquid, then chill the crumbly mix until you’re ready to use it.

For graham cracker crusts, crush your graham crackers in batches so you just have to measure them out on baking day.

Storing Thanksgiving pies

It’s best to make your pie a day or two before the big meal to allow it to fully cool and set. Creamy pies like pumpkin and sweet potato should be stored in the refrigerator after they’ve cooled to room temperature, so make sure you’ve got the extra space!


Fruit pies, whether they are single or double crust, can be stored at room temperature. Use a pie keeper or wrap in plastic. They’ll keep for about 5 days at room temperature, even after you’ve cut them.

I like to tuck a little strip of folded aluminum foil against the cut edges of the pie when storing the leftovers. This can keep any looser fillings from spilling out, and helps protect the pie from drying.
